
French Macarons
Every tea party needs a few beautiful French macarons. These delicate little treats have a perfectly light texture, and the fun colors make them a favorite for parties.
Ingredients:
- 1/2 cup almond flour
- 1 cup powdered sugar
- 2 egg whites
- 1/4 cup sugar
- Vanilla
- Food coloring of choice
Preparation:
- Preheat oven to 350 degrees F. Place parchment paper on baking sheet. Whisk almond flour and powdered sugar together. Sift and set aside.
- In a bowl of a stand mixer with a whip attachment (or a hand mixer), beat on medium speed until soft peaks form; then add sugar. Continue beating until shiny peaks form. Beat in vanilla and food coloring.
- Using a rubber spatula, carefully fold in almond flour/powdered sugar mixture until incorporated.
- Place mixture in a pastry bag that has a plain round tip approximately 1/2 inch. Pipe mounts 1-1/2 inches in diameter onto your prepared baking sheets. Space approximately 1 inch apart.
- Tip: To get perfectly sized circles, trace a round cookie cutter on the parchment paper to create circle outlines. This will make it really easy to fill the circles and make sure that you have matching ends.
- Place one sheet at a time on the top rack of the oven with a sheet pan on the bottom rack, so the bottoms of your macarons don't burn. Bake until tops and bottoms are firm and golden (about 10-13 minutes). Once they make the little "feet," you know that they're done!
- Take them out of the oven and cool for a couple of minutes while you prepare your filling. Fill with your favorite butter cream, ganache, jam or jelly.
