Glazed Lemon Ginger Tea Cookies

Ingredients
- For the cookies:
- 2 cups unsalted butter at room temperature
- 1 1/3 cups powdered sugar
- 1 tsp grated lemon zest
- 1 Tbs lemon juice
- 1/2 tsp vanilla extract
- 4 cups all-purpose flour
- 1/2 tsp salt
- 1/4-1/2 cup finely chopped candied ginger
- Ingredients for Icing:
- 1/4 cup lemon juice or water
- 2 cups powered sugar
Directions
In a large bowl, beat butter until creamy.
Add sugar; mix until light and fluffy.
Add lemon zest, lemon juice and vanilla until well mixed.
Mix in flour and salt until combined.
Stir in the candied ginger bits.
Roll dough into log, wrap in plastic and refrigerate for 1 to 2 hours.
Pre-heat oven to 350 degrees.
Take dough out of fridge and form into 1/4" rounds.
On an ungreased baking sheet, arrange the cookies so they don't touch.
Bake for 16-20 minutes; allow to cool on baking rack.
While cookies are baking, mix icing ingredients together. If the icing is too thick, add a small amount of water to attain desired consistency.
Dip cookies in icing; let set.
